Make Pasta at Home

Ingredients
2 Cups AP Flour
3 Eggs
1 tsp Olive Oil
1/2 tsp Salt
Instructions
On a clean non-porous surface (kitchen counter is great), make a small mountain using two cups of flour.
In the center of the mountain make a hole large enough for the other ingredients. In the hole, add eggs, olive oil and salt.
Using a fork, whisk together slowly incorporating the flour holding the other ingredients. As it becomes harder contain everything, begin using your hands to combine all the ingredients.
Knead the dough for about 10 minutes, then roll into a ball and flatten into a disc. Cover in plastic and refrigerate for 30 minutes (up to 24 hours).
Remove the dough and place it on a clean surface. Using a rolling pin, roll the dough into a thin sheet about 1/8″ thick. Once done, fold the top and bottom of the dough over the middle so that there are three layers. With a sharp knife, slice the pasta into desired thickness.
TIP: They will expand when you cook them, so if you want thin pasta, cut thinner than you want the finished product to be.
To cook, boil water with 1-2 tbsp of salt, add the pasta to the boiling water and cook about 5 minutes. Remove from the heat and combine with your favorite sauce, cheese, or butter.
