Back with another high protein, healthy fat, low carb Frittata.
I've been working on getting my fiber in. On top of all the "to do's" running through my head, fiber, floats around there as a "yeah, this is important AND it's a f*cking pain in the ass". Feel me?
So, in an effort to bump fiber for 4 meals and only think about it once, I looked up the list of high fiber foods. BOOM! Artichoke hearts. One of my favorites.
I topped this baby Challula this week, but you do you boo. XO
Ingredients:
1 LB Ground Buffalo
8 Eggs
226g Low-fat Cottage Cheese
18 oz Quartered Artichoke Hearts (2 cans)
1 Slice Baon, diced
3 oz Shallots, diced
1 tbsp Olive Oil
Seasoning of choice, I used a Spanish rice seasoning, garlic powder, salt and pepper
Instructions:
Preheat the oven to 350 and take out an oven safe fry pan. Get that ground buffalo (or ground meat of preference) browning with olive oil and your choice of seasoning. While that's going, which the eggs and cottage cheese, or blend them together.
Take out the browned bison. Add the slice of bacon and brown. Add the shallot, sauté until it softens. Add the bison and artichoke hearts back, spread it out evenly then pour in the egg mix. Transfer to the oven for 20-30 minutes or until the frittata is cooked through.
Remove and cool. Slice into 4 pieces and wrap each in foil for the week.
