I'm loving this one. Trying to think about what flavor frittata to do this week and then it hit me, Tikka Masala. Food should be delicious and this fits the bill.

Ingredients
8 Eggs
226g Low-Fat Cottage Cheese
1 LB Lean Ground Turkey
1/3 Cup Tikka Masala Flavor Bomb
9 oz Quartered Artichoke Hearts, drained
3 oz Shallot
4 tbsp Basil, chopped
1 Tbsp Olive Oil
Seasoning of choice, I used Spanish Rice & Garlic Powder.

Preheat your oven to 350 and take out an oven safe pan. Whisk the eggs, cottage cheese and tikka masala together (or blend them together).

Heat your pan over medium heat, add the oil, ground turkey and seasoning of choice. Brown it, then transfer to a bowl. Add the onion and saute 2-3 minutes. Add browned turkey and artichoke hearts back to the pan, spread out evenly then pour the egg mix over. Bake 20-30 minutes until cooked through. Slice into 4, wrap in foil and refrigerate for your week ahead.
