High protein, healthy fat and low carb. My go to breakfast for busy weekdays is a frittata that I change up with flavors and ingredients to keep it fresh and exciting. This week I went Italian with a Tomato, Mozzarella & Basil Frittata. This baby packs a punch. Try it out and let me know what you think.

Ingredients
8 eggs, whisked
1 LB ground Turkey, browned
1/4 cup onion, diced
3 garlic cloves, minced
2 cups cherry tomatoes
1/4 cup fresh basil, chopped
3 oz mozzarella slices, roughly chopped
2 tbsp Olive Oil
Salt & Pepper to Taste

In an oven safe pan, brown meat, transfer to a dish. Saute onions, add garlic and tomatoes. Saute until tomatoes begin to break down. Add 1/2 the basil and the turkey, combine well. Top with the mozzarella and chopped basil then pour over the whisked eggs. Bake in a 350 degree oven for 20 minutes. Allow to cool, slice into 4 pieces and wrap in foil for the week ahead.

Reheat in the oven for 5-10 minutes at 350, or pop in the microwave (minus the foil) for 1 minutes.
