Do you wake up excited to eat breakfast? I sure as f*ck do, but it might be because I prep killer frittatas every week so I have breakfast at my fingertips with no clean up.

This week I went with a ground beef & mushroom frittata.

Ingredients
1 LB Lean Ground Beef
1 Cup Low Fat Cottage Cheese
2 tbsp Olive Oil
6 Eggs
2 Cups Mushrooms
1 bunch Green Onion
1 Cup Cherry Tomatoes
2 Cups Spinach
Seasoning of choice, I went heavy on the garlic and a Spanish rice seasoning I had, but you do you.

Preheat oven to 350 and take out an oven safe fry pan. Whisk eggs and cottage cheese together.

Brown and season beef. Remove beef and add mushrooms, saute those until they brown. Remove mushrooms and add onion and tomatoes, saute 3-4 minutes. Add spinach, combine until it wilts. Add mushrooms and beef. Combine everything and pour over the egg mix. Transfer to the oven 20-30 minutes or until its cooked through.

Let cool, then slice into 4 and wrap in foil for the week ahead.
